Ingredients
Directions
-
In a bowl, knead the flour with cottage cheese, butter and 1 teaspoon of salt with a cool hand into a smooth dough.
-
Dust the work surface with flour and roll out the dough. Fold the dough in three and roll it out again. Repeat this 2 more times. Fold the dough back up and let it rest in the refrigerator for 1 hour, wrapped in cling film.
-
Preheat the oven to 200 ° C. Cut the coriander seeds, cumin seeds and sesame seeds into a mortar and mix salt and pepper to taste.
-
Roll the dough again into a thin piece of 30 x 20 cm. Cut the piece into strips of 1 cm wide and 20 cm long. Place the bars on a griddle covered with parchment paper and brush them with egg. Sprinkle the spice mixture over it.
-
Put the baking tin in the middle of the oven and bake the stalks golden brown for about 15 minutes. Let them cool on a grid.
-
This quark dough is just as brittle as puff pastry, but contains much less fat. Also ideal for sweet and savory tarts.
