Schnitzel with apricot jus
A tasty Dutch recipe. The main course contains the following ingredients: meat, potatoes (solid, scrubbed), green beans, olive oil, pork cutlets (unpansed), onion (chopped), mustard and apricot jam (450 g pot).

Halve the potatoes and boil them in water with salt in 15 min. Just done. In the meantime, remove the stalk and the tip of the green beans. Drain the potatoes and cut into slices.

Heat 2 tbsp oil in a frying pan and fry the potato slices in approx. 10 min. Golden brown and crispy.

In the meantime, heat the remaining oil in another frying pan. Sprinkle the schnitzels with pepper and salt and fry them in 8 min. Brown and cooked on both sides. Use the pan of the potatoes to cook the green beans in 8 minutes.

Keep the cutlets warm on a plate under aluminum foil. Fry the onion in the shortening. Add 125 ml of water and stir the cakes. Add the mustard and the apricot jam and let it boil for 2 minutes. Season with salt and pepper.

Divide the cutlets over 4 plates and pour the apricot jus over it. Serve with the green beans and the baked potatoes.
