Scrambled eggs with avocado and goat cheese from denise short liver

Halve the avocado, remove the kernel and cut the flesh into cubes.

Heat the oil in a frying pan with non-stick coating. Add the eggs and stir well with a spatula. Leave the egg in between for about 10 seconds. with rest.

Spoon the pieces of solidified egg through the still liquid part until the egg is solidified, but still creamy. Remove the pan from the heat.

Divide the scrambled eggs over the bowls and immediately crumble the goat's cheese so that it melts a little.

Slice the chives. Add the avocado cubes and chives to the egg mixture. Season with salt and pepper and drizzle with extra virgin olive oil.
