Preheat the oven to 200 °. Heat oil in a soup pot. Bake the vegetable mix for approx. 3 minutes. Stir the vegetable mixture through the soup with 1 liter of water and slowly bring to the boil.

Spoon the shrimp through the soup. Let the soup boil gently for about 3 minutes. Cut the croissant on the top and place on a baking tin.

Sprinkle the inside of the croissants with cheese. Fry the croissant in the middle of the oven for about 4 minutes. Serve the soup with croissants.
