Shrimp with spicy tomato salsa

A nice mexican recipe. The starter contains the following ingredients: fish, king prawns (raw and unpeeled, frozen 500 g), limes, tomatoes, spring onions ((3 pieces), in thin rings), coriander (15 g), red pepper (finely chopped and seeds removed) , olive oil, garlic (in thin slices), ground cumin (djinten) and paprika.

Directions

  1. Thaw the shrimps and pat dry with kitchen paper.
  2. Squeeze out 1 lime, cut the other into 4 parts.
  3. Remove the seeds from the tomatoes and cut the flesh into small cubes.
  4. Mix the tomatoes in the bowl with the spring onion, half the coriander and half of the red pepper.
  5. Add the lime juice, salt and (freshly ground) pepper to taste.
  6. Set the salsa apart until used.
  7. Heat the oil in a large frying pan and fry the garlic and the remaining red pepper for 30 seconds.
  8. Add the shrimp, cumin and paprika powder.
  9. Fry the shrimp for 3-5 minutes on a medium heat until it turns bright pink.
  10. Sprinkle the rest of the coriander over it.
  11. Serve the shrimp with lime wedges and tomato salsa.
  12. Tasty with small flour tortillas or baguette..
