Quick wok dish for 1 person with wholegrain noodles, ginger, wok vegetables, cashew nuts, soy sauce and coriander.

Directions

  1. Prepare the noodles according to the instructions on the package.
  2. Peel and grate the ginger roughly.
  3. Heat the peanut oil in a stirring stir fry the vegetables and ginger for 3 minutes on medium heat.
  4. Add the cashew nuts and soy sauce and cook for another 3 minutes.
  5. In the meantime, cut the coriander roughly.
  6. Divide the noodles over a bowl. Divide the vegetables and sprinkle with the coriander. Drizzle with lime juice.
