Prepare the noodles according to the instructions on the package.

Peel and grate the ginger roughly.

Heat the peanut oil in a stirring stir fry the vegetables and ginger for 3 minutes on medium heat.

Add the cashew nuts and soy sauce and cook for another 3 minutes.

In the meantime, cut the coriander roughly.

Divide the noodles over a bowl. Divide the vegetables and sprinkle with the coriander. Drizzle with lime juice.
