Spaghetti carbonara with endive
A surprising variation of the classic spaghetti carbonara. Now with endive and mushrooms.

Cook the spaghetti al dente according to the instructions on the package.

Meanwhile cut the mushrooms into slices. Grate the Parmesan cheese.

Heat a skillet without oil or butter and fry the bacon strips for 3 min. On medium heat.

Add the mushrooms and the endive in parts and cook for another 5 minutes. Change regularly. Season with pepper.

Meanwhile, put the eggs in a bowl and beat with the cheese until sauce.

Drain the spaghetti and put it back in the pan. Add the sauce while stirring. Keep stirring until the sauce has thickened slightly. Put the endive mixture through.

Divide the spaghetti over the plates.
