Spaghetti of sweet potato with tomato and catelan sausages


Pumpkin spaghetti mixed with regular spaghetti! Delicious with the homemade tomato sauce and sausages.

Directions

  1. Clean the onions and cut into half rings. Clean the garlic cloves and cut finely. Wash the tomatoes and halve them.
  2. Keep 3 tbsp oil from the jar of sundried tomatoes separately.
  3. Heat 1 tbsp oil from the jar of sundried tomatoes in a frying pan and fry the sausages on low heat in 15 min. Around golden brown and done.
  4. Meanwhile, bring a large pot of water to the boil. Heat 1 tbsp oil from the jar of sundried tomatoes in a frying pan and fry the onion for 5 minutes on low heat.
  5. Add the garlic and half of the cherry and cook over medium heat for 4 minutes. Change regularly.
  6. Put the sundried tomatoes, the rest of the cherry and 1 tbsp oil from the jar of sundried tomatoes in a high cup and puree with the hand blender.
  7. When the water is boiling, add the fresh pasta and possibly salt to the pan and cook for 4 minutes until al dente. Add the pumpkin spaghetti the last minute.
  8. Drain the pasta and collect a cup of cooking liquid.
  9. Mix the spaghetti with the mashed tomatoes and the baked tomato. Add some cooking liquid to make it smoother and spread over deep plates.
  10. Cut each sausage into 3 pieces and spread over the plates. Sprinkle with the cheese.
