Spaghetti with zucchini mint sauce and chicken
Wholemeal spaghetti with courgette and mint sauce with chicken breast in soy sauce and djinten

Cook spaghetti according to directions on packaging. Clean zucchini and cut into pieces. Peel and chop onion and garlic. Clean fresh mint and finely chop. Cut chicken fillets into strips and mix with sweet soy sauce, half garlic and half cumin.

Heat in frying pan 1 tbsp oil and fry chicken strips 10 min. Heat in deep pan 1 tbsp oil and fry zucchini with onion for 3 minutes. Add remaining garlic and cumin and cook for 1 min. Spoon half in frying pan with chicken and fry for 1 min.

Add 3 dl of water to the deep pan and cook the remaining zucchini for 5 minutes. Puree with a hand blender. Stir in chicken and fresh mint through zucchini sauce. Spaghetti with zucchini chicken mixture on four plates.
