Spanish vegetable omelette
A tasty Spanish recipe. The vegetarian main course contains the following ingredients: olive oil, solid potatoes (peeled and diced), red pepper (diced), mild paprika, broad beans and eggs.

Heat the oil in a frying pan and fry the potato cubes in a gentle heat for about 8-10 minutes, scoop them occasionally.

After 5 minutes, put the peppers, paprika and broad beans through.

Beat in a bowl the eggs with salt and (cayenne) pepper to taste.

Pour the egg mixture over the potato mixture and place the lid on the pan.

Fry the omelette over medium heat for 10-15 minutes, until the top is dry and light brown.

Remove the pan from the heat, let the omelet in the pan cool for 10-15 minutes until lukewarm.

Cut the omelet into points and place them on four plates.

Tasty with garlic mayonnaise..
