Curry with beef rags, coconut milk and coriander.

Let the meat come to room temperature and cut into pieces. Slice the garlic.

Clean the lime, grate the green skin off and squeeze out the fruit.

Heat the oil in a frying pan and fry the meat in about 5 minutes on high heat around brown.

Add the curry paste and coconut milk, heat for approx. 1 min.

Add the garlic, lime juice, lime zest, fish sauce, coconut milk, sugar and water.

Allow the meat to cook over low heat in 2½-3 hours until cooked.

Season the curry with fish sauce. Slice the coriander and sprinkle over the curry just before serving.
