Spicy white beans


A nice Mediterranean recipe. The vegetarian lunch contains the following ingredients: haricots verts, salt, white beans (400 g), onion, fresh dill, arugula (approx. 30 g), extra virgin olive oil, ready-to-cook spinach, garlic, tomato cubes (400 g tin) and freshly ground black pepper.

Directions

  1. Haricots verts clean, wash, cut into pieces and just boil in pan with plenty of water and salt in about 5 minutes. Let it drain. Rinse white beans in the sieve and let them drain. Peel onion and finely chop. Dill finely cut. Roughly cut rocket.
  2. Heat 1 1/2 tablespoon of oil in (frying) pan. Onions gently bake for about 2 minutes. Spinach on the half-high fire while stirring. Peel the garlic and press it over it. Add: white beans, haricots verts and tomato cubes. Season with salt and pepper. Stir gently for about 5 minutes. Stir in the arugula and the rest of the oil and continue to heat for approx. 1 minute. Dill over it. Delicious with slices of feta or haloumi and potatoes fried in olive oil.
