Spinach salad with noodles and chicken


Salad with noodles, chicken, cucumber and spinach with a dressing of soy sauce, lime juice and sweet chili sauce.

Directions

  1. Break the noodles in half and cook them according to the instructions on the package.
  2. Drain the noodles in a colander and rinse under cold running water. Let it drain well.
  3. Cut the chicken fillet into thick strips.
  4. Heat the oil in a frying pan and fry the chicken strips in 5-6 minutes until tender and brown, season with salt and (freshly ground) pepper.
  5. Put them on a plate. Squeeze the limes. In a bowl for the dressing, beat the chilli sauce with the garlic, the lime juice and the soy sauce.
  6. Saute the cucumber with a cheese slicer in ribbons.
  7. In a large bowl, spoon the noodles with the dressing, spinach and cucumber. Put the chicken strips on it.
