Spinach salad with white cheese cubes


Fast vegetarian salad of couscous with olive oil, red onion, spinach, yellow pepper and white cheese cubes.

Directions

  1. Pour the stock over the couscous in a deep plate, let it simmer for 5-6 minutes. Beat in a salad bowl a dressing of both oils, lemon juice and pepper and salt to taste.
  2. Peel the onion, finely chop and mix through the dressing. From the spinach bag, find the smallest leaves and remove the stiff stalks. Select in this way about 100 grams of spinach.
  3. Cut the peppers into quarters, remove the seeds and cut the flesh into narrow strips. Mix the spinach and paprika with the dressing.
  4. Spoon the cured couscous gently through it. Crumble the cheese cubes above the salad. Tasty with roasted chicken.
