Spring salad with lime oil and provolone


A tasty Italian recipe. The vegetarian starter contains the following ingredients: lime (scrubbed and green skin grated), olive oil, green asparagus tips, garden peas, zucchini (in slanted slices), fresh spinach, fresh mint ((15 g), only the leaves), provolone (cheese ) and seedless black olives (Taggia).

Directions

  1. Mix the lime zest with the olive oil and season with salt and pepper.
  2. Cook the asparagus tips and the garden peas for 1-2 minutes in a pan with salted water without a lid.
  3. Take them out of the pan with a slotted spoon and rinse them under cold running water.
  4. Spread the slices of zucchini thinly with 1 tablespoon of lime oil and grill them 2-3 minutes per side.
  5. Spoon the spinach with the mint.
  6. Divide the asparagus tips, the garden peas and the courgette over the salad.
  7. Make the provolone with the peeler and put it on the salad.
  8. Sprinkle with the olives and pepper to taste and drizzle the whole with the rest of the lime oil..
