Spring stew with pork fillet
Stew of potatoes and lamb's lettuce with pork fillet.
Peel the potatoes. Beat the egg. Boil the potatoes in 20-25 minutes.
Stir the yogurt and egg together and season with salt and pepper. Heat the grill pan. Brush the pork fillets thinly with oil.
Grill the fillets in 8-10 minutes, turn them halfway and drizzle them with lemon juice.
Beat a dressing of the rest of the oil and the rest of the lemon juice and the mustard. Season with salt and pepper.
Drain the potatoes, crush them and stir in the yoghurt mixture and the lettuce.
Serve the stew with the grilled pork fillet and the dressing as gravy.
