Stars of potato and beet


A tasty Dutch recipe. The vegetarian side dish contains the following ingredients: solid potatoes, boiled beetroot ((500 g), peeled), olive oil, crème fraîche (125 ml cup), chives ((a 25 g), finely chopped), dill ((a 15 g)) and finely chopped).

Directions

  1. Peel the potatoes, halve and boil in water with salt in 20 min. Until done. Drain and let cool for 5 minutes.
  2. In the meantime, preheat the oven to 190 ºC. Cut the potatoes and beetroot into slices of 1 cm thick. Push stars with the stitch shape. Divide the stars over a baking sheet covered with baking paper. Drizzle with the oil and pepper and salt and grill for approx. 10 minutes in the oven.
  3. Meanwhile stir in the crème fraîche with the chives, dill and pepper and salt. Serve as a dip in the potato and beet stars.
  4. You can prepare the stars the morning before. Keep them covered in the refrigerator. Roast them in the oven at 190 ºC just before serving.
