Stewed cod in tomato sauce


Cod from the oven with garlic, oregano, tomato sauce, balsamic vinegar, green asparagus and olives.

Directions

  1. Preheat the oven to 175 ° C. Slice the garlic. Heat the oil in a frying pan and fry the garlic for 2 min.
  2. Add the oregano, the tomato sauce, balsamic vinegar, pepper and salt and leave to simmer for 5 minutes on low heat.
  3. In the meantime, remove the woody underside of the asparagus, cut into 1 cm pieces and mix through the tomato sauce.
  4. Divide the sauce over the baking dish and place the cod fillets on it. Sprinkle the fish with pepper and salt.
  5. Let the olives drain, cut roughly and spread over the fish. Fry the fish for about 15 minutes in the middle of the oven until done.
  6. Meanwhile, cook the wholemeal spaghetti al dente according to the instructions on the package.
  7. Cut the lemon into slices. Divide the pasta over deep plates, spread the cod, asparagus and tomato sauce over it and put a slice of lemon on it.
