Stir-fry spinach with zucchini


Stir-fried spinach with zucchini, lemon, garlic, nutmeg and rapeseed oil.

Directions

  1. Heat the oil in a wok, add the spinach in parts and let it shrink all the time.
  2. Meanwhile, add the nutmeg, pepper and possibly salt.
  3. Drain in a colander. Push out as much moisture as possible with the convex side of a spoon.
  4. Grate the yellow skin of the lemon, halve the fruit and press 1 half.
  5. Cut the zucchini into ½ cm slanting slices. Slice the garlic.
  6. Heat the oil in the wok and fry the zucchini with the lemon zest and the garlic, shoveling for 3 minutes on high heat.
  7. Add the spinach, season with 2 tbsp lemon juice and heat for 2 more minutes.
