Summer cod
A nice Mediterranean recipe. The main course contains the following ingredients: fish, oil, shallots (in rings), garlic (finely chopped), tomato cubes (400 g), sweet pointed peppers (in thin strips), vermouth (liquorice), anise drink (liquorice), cod fillet (a ca 120 g), flour, Dutch shrimp, dill ((15 g) and chopped).

Heat 3 tablespoons of oil and fry the shallots and garlic until golden brown. Add the tomato cubes, paprika, vermouth and aniseed and simmer for 15 minutes with the lid on the pan. Season with salt and (freshly ground) pepper.

Sprinkle the cod with salt and pepper and roll it through the flour. Heat the rest of the oil in a frying pan with non-stick coating and fry the cod in light brown and cooked until 5-8 minutes. Bake the prawns the last minute.

Spread the tomato-pepper sauce over four plates and scoop the cod with shrimps next to it. Sprinkle with dill and serve immediately. Tasty with couscous or rice.
