Sweet couscous salad


Salad of couscous with beets, mango, smoked chicken and carrot.

Directions

  1. Let the mango pieces defrost and cut the winter carrot into cubes of ½ x ½ cm (brunoise).
  2. Put the carrot together with the couscous in a large bowl and mix in the cinnamon, the curry powder and salt.
  3. Pour the boiling water in and leave for 10 minutes. Stir with a fork.
  4. Clean the lime and grate the green skin of the lime above the couscous. Squeeze the fruit and stir the juice through the couscous.
  5. Peel the beetroot and cut into small cubes.
  6. Spoon the beets, mango and chicken strips into the couscous and serve.
