Sweet onion puree


A tasty Dutch recipe. The vegetarian side dish contains the following ingredients: butter, bay leaf, thyme (only the leaves), onions (in rings), crumbly potatoes (peeled and large halved) and vegetable stock (from tablet).

Directions

  1. Place a large pan over medium heat and put the butter, bay leaf, thyme and onion in the pan. Season with salt and pepper. Fry 10 minutes gently with the lid on the pan or until the onion is sweet and soft. Scoop occasionally.
  2. Add the potatoes, pour the stock and bring to the boil. Cook gently in 15-20 minutes until done.
  3. Drain the potatoes and collect 100 ml of the cooking liquid. Allow the potatoes to dry for a few minutes and put them back in the pan. Remove the bay leaf. Pour the collected broth over the boiled potatoes and stamp with a puree pestle into a coarse puree. Taste and season with salt and pepper.
