Taboulé with garlic mussels
A nice Mediterranean recipe. The main course contains the following ingredients: fish, couscous, tomatoes, cucumber, fresh parsley (30 g), fresh mint (15 g), lemon (squeezed), extra virgin olive oil, red onion (chopped), ready-to-cook mussels and garlic (in slices).

Couscous according to instructions in boiling water.

Cut tomatoes into quarters, remove seeds and cut flesh into cubes.

Halve cucumber in half lengthwise and scrape out with teaspoon seeds.

Cut cucumber into narrow strips and then into small cubes.

Cut leaf of parsley and fresh mint.

Remove couscous with fork and add 2-3 tbsp lemon juice, 3 tbsp oil, onion, fresh herbs and cubes of cucumber and tomato.

Season the couscous salad (= taboulé) with salt and pepper.

Washing and checking mussels: broken specimens and open mussels that do not close after tap against countertop.

Mussels with garlic in (mussel) pan shovel.

Sprinkle leftover lemon juice and oil.

Cover mussels covered over a high heat for about 8 minutes, until all the shells are open.

Pan shake regularly.

Draining mussels in colander, discarding left-overs.
