Cut the cheese into cubes and the tomato into pieces. Peel the garlic and press over the olive oil. Spoon together the cheese, olives, tomato, garlic oil, thyme and lemon juice.

Season with pepper and salt. Put in small dishes on lettuce leaves and serve with cocktail sticks.
