A nice Japanese recipe. The vegetarian main course contains the following ingredients: cauliflower (in florets), green beans (cleaned), broccoli (in florets), eggs, cornstarch (sifted), flour (sifted) and deep-frying oil.

Directions

  1. Bring a large pan with plenty of water to the boil. Cook the cauliflower in 10 min., The green beans in 8 min. And the broccoli in 4 min. Al dente. Rinse under cold running water. Drain on kitchen paper.
  2. Split the eggs and whisk the egg yolks with a whisk with 350 ml of cold water in a bowl. Fold in the cornstarch, flour and 1 tsp salt. In a different bowl, whisk the egg whites stiffly and carefully fold through the batter.
  3. Meanwhile, heat the oil in a wok. Check with a piece of bread whether the oil is hot enough. If that is the case, then the bread starts to fizz immediately. Take the vegetables in small portions through the batter and fry in the hot oil in 2 min. Light brown. Drain on kitchen paper.
