Tiramisu with cherries

Leave some cherries for the garnish. Halve the rest and remove the seeds.

Put them in a saucepan and add the sherry, the caster sugar and the water. Bring to the boil and let the cherries boil for 3 minutes.

Remove from the heat, pour into a bowl and let cool. Drain, collect the moisture. Meanwhile, split the eggs, the proteins are not used.

Put the egg yolks in a bowl with the sugar and beat with a mixer in 4 minutes to a light yellow foam.

In a different bowl, whisk the whipped cream. Mix the mascarpone and 6 tablespoons of hot water through the egg foam. Fold the whipped cream through.

Chop the chocolate into small pieces. Mix ⅔ of it through the mascarpone mixture.

Break the long fingers in half. Dip half in the residual cherry water and cover the bottom of the glasses with it.

Divide half of the mascarpone mixture and then half of the cherries.

Dip the remaining long fingers into the cooking liquid and make another layer with the cookies, the rest of the mascarpone mixture and the rest of the cherries.

Allow to set for at least 2 hours in the refrigerator. Garnish with the rest of the chocolate and the cherries kept behind. Yummy! .
