Trifle with meringue, mango and passion fruit
Little effort, great fun! With this dessert of mango, passion fruit, red berries, whipped cream and ricotta you are the star of the evening.

Peel the mango, cut the flesh of the kernel and cut this flesh into small cubes.

Halve the passion fruit, scrape out all the flesh and seeds and mix the half through the mango cubes. Ris the berries of the twigs.

Beat the whipped cream and sugar with a mixer. Stir the ricotta with a fork. Gently fold the cream through the ricotta.

Break the meringues into small pieces and gently scoop through the cream mixture.

Divide the mango-passion fruit mixture over the glasses. Divide half of the red berries over it.

Spoon the meringue mousse on top and garnish with the rest of the passion fruit and red currants.
