Directions

  1. Sprinkle salt and pepper in abdominal cavities of trout. Lemon well clean and halve. Press out half, cut another half into thin slices. Pour lemon juice into trout cavities of trout. Cut the ham into small pieces. Parsley finely chop and half by ham.
  2. Sprinkle flour on flat board and roll trout through it so that all sides are covered. Shake off excess flour. Heat oil to very hot in large frying pan and fry for about 10 minutes, halfway through (beware of splashing oil!). Remove trout from pan and let it drain on kitchen paper. In the meantime, heat 1 tablespoon of cooking oil in another frying pan and bake ham parsley mixture for about 1 minute. Place trout on four plates and distribute hams. Garnish with slices of lemon and rest of parsley. Tasty with boiled potatoes.
