Directions

  1. Preheat the oven to 175 ºC.
  2. Chop the walnuts coarsely and cut the mushrooms into pieces.
  3. Remove the crusts from the bread and cut the bread into pieces.
  4. Slice the garlic and mix with the mushrooms, nuts, bread, thyme and oil.
  5. Remove the elastic from the turkey and fill the cavity with the mushroom mixture.
  6. Heat the butter in a saucepan and leave to cool for 5 minutes.
  7. Add the rest of the oil to the melted butter and brush the turkey with the butter oil mixture with a baking brush.
  8. Sprinkle with pepper and cover the turkey breast with the slices of bacon. Place the turkey with the breast upwards in the roasting pan.
  9. Fry the turkey in the middle of the oven for about 1 hour and 40 minutes until done. Check from 1 hour and 20 minutes regularly on doneness.
  10. Put the meat thermometer in the breast and the thickest part of the thigh. The turkey is cooked when the thermometer shows 70 ° C at those places.
  11. Remove the turkey from the oven and let it rest for 15 minutes before cutting.
