Vegetable couscous with grilled chicken
Couscous with grilled chicken, zucchini, tomato and basil.

Put the couscous in a large bowl and mix in the salt. Pour over the boiling water and let it soak for 4 minutes.

Slice the basil leaves. Beat a dressing of the oil, the lemon juice, half of the basil and season with salt and pepper.

Cut the zucchini into half slices and the tomato into wedges. Heat the oil in a frying pan and fry the zucchini for 3 minutes.

Press the garlic above and cook for 1 min. Spoon the tomato through and cook for 5 minutes on low heat.

Add the couscous with the rest of the basil, scoop and cook for another 1 minute. Season with salt and pepper.

Cut the chicken into slices, brush with the oil and sprinkle with salt and pepper. Heat the grill pan and grill the chicken in 6 minutes until done. Turn halfway.

Divide the couscous and chicken over plates. Serve with the basil dressing.
