Vegetable disc on ciabatta bread
A nice Mediterranean recipe. The vegetarian main course contains the following ingredients: ciabatta bread, olive oil, vegetable disk (a 180 g), tomatoes, arugula (75 g), garlic (halved), black olives ((pot 240 g) and sliced).

Cut the ciabatta into 4 pieces and cut the pieces open. Roast the halves in the toaster or in the grill pan golden brown and crispy.

In the meantime, heat 2 tbsp oil in a frying pan and fry the vegetable slices 4-6 min. Turn regularly. Cut the tomatoes in four, remove the seeds and the moisture and cut the flesh into segments. Mix the tomatoes with 50 g of rocket, 2 tbsp oil and salt and pepper.

Place the lower ciabatte halves on 4 plates. Rub the bread with the cutting surface of the garlic. Put a vegetable disk on it. Divide the olives and the rest of the arugula over it. Cover the civilians with the upper ciabatte halves. Serve with the tomato salad.
