Chop the onion and garlic. Clean the eggplant and zucchini and cut into 1 1/2 to 2 cm dices.

Cross the tomatoes, dip for a few seconds in boiling water and rinse under cold water. Unfreeze the tomatoes, pitted and cut into pieces.

Clean the peppers, wash and cut into pieces.

Heat oil in a wok or large frying pan and fry the onion and garlic 2 minutes gently. Add the eggplant, zucchini and paprika and cook for 5 minutes.

Stir in the tomatoes. Let the vegetables simmer for about 12 minutes. Season with salt and pepper.

Make 4 holes in the vegetables with a soup spoon. Carefully break an egg above each hole. Let the whole egg be done with the lid on the pan.
