Vegetarian dish with eggplant, zucchini, paprika and tomato.

Directions

  1. Chop the onion and garlic. Clean the eggplant and zucchini and cut into 1 1/2 to 2 cm dices.
  2. Cross the tomatoes, dip for a few seconds in boiling water and rinse under cold water. Unfreeze the tomatoes, pitted and cut into pieces.
  3. Clean the peppers, wash and cut into pieces.
  4. Heat oil in a wok or large frying pan and fry the onion and garlic 2 minutes gently. Add the eggplant, zucchini and paprika and cook for 5 minutes.
  5. Stir in the tomatoes. Let the vegetables simmer for about 12 minutes. Season with salt and pepper.
  6. Make 4 holes in the vegetables with a soup spoon. Carefully break an egg above each hole. Let the whole egg be done with the lid on the pan.
