Vegetable fries with falafel and yoghurt sauce
Vegetables from the oven with a fresh, slender dip of yogurt and chives.

Preheat the oven to 220 ° C.

Peel the winter carrots and celeriac and cut into French fries. Remove the stalk and the seeds from the bell pepper and cut the flesh into strips.

Divide the vegetables over a baking sheet covered with parchment paper. Drizzle with oil and sprinkle with salt.

Roast the vegetables in the middle of the oven for about 30 minutes until golden brown and done. Change every 10 min.

During the last 10 minutes of cooking, heat the falafel balls according to the instructions on the package.

In the meantime, finely chop the chives, mix with the yoghurt and season with (freshly ground) pepper.

Spoon the vegetable fries on a plate and serve with the chives dip and falafel balls. Yummy! .
