Visduo with wine dill sauce
A tasty recipe. The main course contains the following ingredients: fish, shallot (chopped), black peppercorns, dry white wine, fish stock (pot 380ml), cooking cream (250ml), fresh dill (chopped), olive oil, cod fillets (about 250g), salmon fillet (about 250 g) and capers.
Bring the shallot, the peppercorns and the wine to a boil in a saucepan. Cook in half. Sieve over a bowl and pour the liquid back into the pan. Add the fish stock and cook in half. Add the cooking cream and cook in half. Stir in the dill and keep warm on low heat.
Meanwhile, heat the oil in a large frying pan. Divide the fish into 4 pieces and sprinkle with salt and pepper. Fry the cod in 6-8 min. Until done, add the salmon after 2 min and cook until rosé. Turn halfway.
Place a piece of cod and salmon on each plate. Serve with the sauce and garnish with capers. Tasty with fresh tagliatelle and broccoli.
