Yellow rice cooked in coconut milk
A delicious indonesian recipe. The side dish contains the following ingredients: poultry, long grain rice, shallots, sereh, lemon, cloves, oil, koenjit, ketoembar, djinten (ground cumin), coconut milk, chicken stock and salt.

Wash rice until the water is clear.

Chop and shred scallops.

Remove lemongrass outer leaf and halve stem.

Cut lemon in half and squeeze out one half.

Put cloves in 1 lemon peel (rest of lemon is not used).

Heat oil in pan and fry shallots for 1 minute.

Add rice, koenjit, ketoembar and djinten and shovel.

Add coconut milk, bouillon tablet, lemongrass, lemon zest and salt.

Rice cooking according to instructions on the packaging.

In the meantime, scoop twice.

If rice is almost done, make sure that there is enough cooking liquid.

Finish the rice from a fire, with a lid on the pan, for 10 minutes.

remove lemon grass and lemon zest.

Stir the rice with pepper flowers if desired (see tip)..
