Zuppa alla pavese with romanasalad


A tasty Italian recipe. The vegetarian main course contains the following ingredients: lettuce (romana), artichoke hearts ((400 g) drained and in quarters), red onion (in fine rings), Italian (pesto dressing (chilled 100 g)), vegetable stock (of tablet), bread (grated in thick slices (eg multi-grain bread), butter, eggs and spicy cheese (eg grana padano).

Directions

  1. Tear the lettuce coarsely, wash and dry well.
  2. Divide the lettuce with the artichoke hearts and red onion over a flat dish.
  3. Drizzle the salad with the pesto dressing.
  4. Bring the broth to the boil.
  5. Roast the slices of bread lightly brown.
  6. Spread the slices on one side with the butter.
  7. Place the bread with the buttered side up in 4 deep plates.
  8. Break an egg carefully over each cut; make sure the yolk remains intact.
  9. Pour the broth slowly into the plates.
  10. Season the soup with (freshly ground) pepper and sprinkle the cheese over it.
  11. Serve the bowl of salad with the soup..
