Sauce of freshly sweet apples, 5 spice, ginger syrup, chicken broth, apple cider vinegar and whipped cream.

Peel the apple, cut into quarters and remove the core.

Heat the butter in a thick-bottomed pan and fry the apple with the 5 spice and ginger syrup for 3 minutes on medium heat.

Add the stock, vinegar and whipped cream and leave to simmer for 20 minutes with the lid on the pan. Season with pepper.

Remove the pan from the heat and puree with the hand blender to an even sauce.
