Preheat the oven to 190 ° C.

Halve the apples and cut the halves, with the cores, into slices of 1 mm thick.

Put in a bowl, carefully mix the lemon juice and pour 1 liter of boiling water over it. Allow to stand for 3 minutes and pour into a sieve.

Cut the puff pastry into 10 strips of 24 x 4 cm. Cut the almond paste in the width into slices that are as thin as possible (preferably 1 mm thick).

Take a bar of puff pastry, stretch a bit in length. Place a row of almonds over the length of the top half. Sprinkle with the cinnamon.

Place a row of apple slices on the almond paste. Make sure the slices with the round skin side protrude above the dough and always overlap.

Now fold the bottom half of the bar of dough over the apple slices.

Roll the bar of dough with apple and food into a rose and place on a piece of baking paper of 10 x 10 cm. Put the apple rose with parchment paper in the muffin mold.

The rose does not have to fit: if it is loosely on the opening, it is also good. Make 9 more roses.

Fry the apple roses a little under the center of the oven for approx. 35 minutes until done. Cover with aluminum foil after 15 min. Allow to cool slightly before serving. Yummy! .
