Aubergine curry with steak


A nice thai recipe. The main course contains the following ingredients: meat, eggplant, coriander seed, lime (scrubbed), fresh ginger (peeled), shallots (peeled), red pepper (seed strips removed and in rings), oil, steak (in slices), coriander (( container 15 g) and in coarse picking).

  1. Cut the aubergine lengthwise into slices and then into thin long strips. Sprinkle with salt to taste, transfer to a colander, place a plate with a heavy object, so that as much moisture as possible is pushed out.
  2. Roast the coriander seeds in a dry frying pan until it starts to smell. Clean the lime, grate 1 tsp of skin and squeeze out the lime. Grind the coriander seeds in the mortar with the ginger, shallot, lime zest, 2 tsp lime juice and the red pepper into a spicy paste.
  3. Dab the eggplant pen well dry with kitchen paper. Heat 2 tbsp oil in a large pan and stir fry the eggplant 6-8 min. Then pour in the spice paste, pour 50 ml water and let it simmer for 15 minutes with the lid on the pan over a low heat. seasoned with salt and pepper.
  4. Brush the meat with ½ tbsp oil. Heat the grill pan and grill the steak in 1-2 min. On both sides until the meat is inside rosé. Sprinkle with salt and pepper to taste. Serve the aubergine curry with the steak and sprinkle with the coriander.
