Keep large leaves of basil separate. Grind the rest of the basil, olives, capers, olive oil and garlic into a coarse tapenade.

Season with (freshly ground) salt and pepper.

Spoon a tablespoon of tapenade into the tall glasses. Break the breadsticks in half and put a basil leaf around each half of the soup stalk and wrap a slice of Parma ham around it.

Stick the stems in the tapenade.
