Cheese-like leek


A tasty recipe. The side dish contains the following ingredients: leeks, olive oil, butter, thyme (only the leaves), garlic (finely chopped), cooking cream, Cheddar ((48 or mature farmhouse cheese), freshly grated), Parmesan cheese ((fresh), grated) and cream brie (in pieces).

Directions

  1. Cut the leeks diagonally into pieces of about 2 cm. Heat a large ovenproof casserole (preferably one that is nice enough to serve the dish later) on medium heat. Put a dash of olive oil, butter, thyme and garlic in the pan. Stir in the leek as soon as everything begins to simmer and fry. Fry the leek gently. Look every few minutes in the pan and shovel the whole so that nothing sticks to the bottom.
  2. At this point you have the choice between two methods of preparation. One is good, the other fantastic. You can either stir the rest of the ingredients through the leeks and put the pan without lid in the oven for 45 minutes at 180 ºC. Or, if you want the sweetest leek ever (and I think you want it), turn the fire under the pan a bit down and cook the leeks for another 35 minutes, stirring occasionally until the leeks are soft and intensely delicious.
  3. Preheat the oven to 180 ºC (if you have not already used it to bake the leek). Season the leeks with salt and pepper and scoop in an oven dish, or leave the dish in the pan. Stir the cream and some water through the leek, sprinkle the grated cheeses over it and spread the brie over the surface. Bake the dish in 15 minutes in the oven or until there is a golden brown crust.
