Cherry tomato salsa with pomegranate seeds

Cut the cherry tomatoes into quarters and put in a bowl. Halve the peppers and remove the seed lists.

Cut the flesh of the bell pepper into small cubes of ½ x ½ cm (brunoise) and add to the tomato.

Cut the stalk of the red pepper. Halve the pepper in the length and remove the seed lists with a sharp knife.

Cut the pepper into small pieces and add to the tomato and pepper. Scoop the pomegranate seeds through.

Squeeze out the lime and whisk the juice together with the oil and organic apple syrup into a dressing. Season with pepper and salt.

Remove the leaves of fresh mint from the twigs, cut finely and mix with the dressing through the salsa.
