Chicken cocktail with kaki fruit
Cocktail of smoked free-range chicken fillet, kaki fruit, snack tomatoes, red onion, coriander, baby currant salad and whiskey sauce.

Cut the kaki fruit into cubes of 1 x 1 cm (brunoise). Cut the to in quarters.

Grate the green skin of the lime, halve the fruit and press half.

Cut the onion into wafer-thin rings. Cut two-thirds of the coriander leaves fine.

Mix the kaki, to, lime juice and juice, onion, coriander and oil to a salsa and season with salt and pepper.

Remove 1 leaf of lettuce per person and cut the rest into thin strips. Mix the thin strips with the whiskey sauce. Cut the chicken fillet into strips.

Put a loose lettuce leaf in each glass. Fill the glass successively with the strips of lettuce, chicken and the kakisalsa.

Garnish with the trailed leaves of coriander.
