Chicken stewed in coconut milk with koenjit


A delicious indonesian recipe. The main course contains the following ingredients: poultry, oil, chicken (legs (a 250 g)), onion, garlic, sambal oelek, ketoembar, djinten (ground cumin), koenjit, sereh, brown caster sugar, coconut milk and salt.

Directions

  1. Heat oil in large frying pan and scald chicken around.
  2. Chicken with lid on the pan in about 40 minutes around light brown baking, regular turning.
  3. Last 10 minutes remove the lid from the pan.
  4. Remove chicken from the pan.
  5. Peel onion and garlic, chop and mix (in mortar or food processor) with sambal, ketoembar, djinten and koenjit.
  6. Remove half of the oil from the pan.
  7. Cook gently for approx.
  8. 2 minutes in rest of oil onion mixture.
  9. Remove lemongrass outer leaf and halve stem.
  10. put lemongrass, sugar and coconut milk in the pan and bring sauce to the boil.
  11. Place chicken in sauce and simmer for about 40 minutes.
  12. Remove lemongrass and add salt to taste.
  13. Serve chicken in sauce..
