Chinese omelette
A nice Chinese recipe. The vegetarian lunch contains the following ingredients: free range eggs, soy sauce (bottle 250 ml), sesame oil (bottle 250 ml), ice prawns (a 125 g), ham cubes (duo pack, 250 g), bean sprouts (a 125 g), spring onion (bag 3 pieces) and in slanted rings).

Break the eggs over a bowl. Season with pepper and add the soy sauce. Stir the eggs with a fork. Do not stir too long and too strong. This removes the airiness from the omelette.

Heat the oven grill. Heat the ovenproof frying pan 30 sec. on medium heat. Add the oil. Move the pan so that the whole bottom is covered with oil. Turn the heat high. Pour the egg into the pan. Move the pan so that the whole bottom is covered with egg. Bake 5 sec.

Remove the pan from the heat, cover the egg with the shrimp, ham, bean sprouts and 2/3 of the spring onion and fold the omelet with a double spatula. Put the pan under the grill for 5 minutes. Divide the omelette over 2 warm plates and sprinkle with the rest of the spring onions.
