Couscous salad with chicken piri piri


Couscous salad with pieces of chicken breast in piri-pirisaus, avocado, tomato, red onion, rocket and fresh mango.

Directions

  1. Brush the chicken fillet with the peri-peri sauce. Heat the grill pan without oil or butter and grill the chicken over medium heat for 10 minutes.
  2. Meanwhile, put the couscous in a large bowl and pour over the boiling water. Add the oil and leave covered for 10 minutes.
  3. Meanwhile cut the avocados in half. Remove the kernel and scoop out the flesh with a spoon from the peel. Cut the flesh into slices.
  4. Cut the tomatoes into slices and the red onion into half rings. Stir the couscous with a fork and season with salt and pepper.
  5. Mix the couscous with the lettuce melange. Cut the chicken fillet into slices.
  6. Spoon the couscous on a large scale. Divide the avocados, tomatoes, onion, mango and slices of chicken over them.
