Eggs rothko


Breakfast dish of rye desembrood, eggs, red pepper, salted butter, smoked paprika and chives.

Directions

  1. Cut one slice of 1.5 cm of bread per person.
  2. Remove the stalk from the red pepper. Roll the pepper between your hands so that the seeds fall out. Cut half of the pepper into thin rings and the rest fine.
  3. Mix the butter with the chopped red pepper and the smoked paprika. Season with pepper.
  4. With a 7 cm diameter glass or cup, cut a circle from the center of each slice of bread (do not use this).
  5. Brush the bread gently on both sides with the butter.
  6. Heat per 2 slices of bread a frying pan without oil or butter. Fry the slices of bread over medium heat on one side in 3 min. Until crispy and turn over.
  7. Break the eggs above the rounds in the bread and put the lid on the pan (s) or cover with aluminum foil. Fry the eggs over low heat for 6 minutes until done.
  8. Remove the bread with egg and spread over the plates. Cut the chives above with scissors and garnish with the red pepper rings.
