Empanadas with chorizo
A tasty Spanish recipe. The main course contains the following ingredients: meat, chorizo ((sausage), diced), onion (chopped), red pepper (diced), yellow pepper (diced), oregano, mix for pizza bottom (450 g), spicy cheese ((eg Grana Padano), grated), extra virgin olive oil, fresh parsley ((a 30 g), finely chopped) and (freshly ground) pepper.

Ingredients
- 250 g chorizo (sausage), in cubes
- 1 great onion shredded
- 1 Red pepper in cubes
- 1 yellow bell pepper in cubes
- 1 tl oregano
- 1 business suit mix for pizza bottom 450 g
- 100 g spicy cheese (eg Grana Padano), grated
- 2 el extra virgin olive oil
- Bag fresh parsley (a 30 g), finely chopped
- (freshly ground) pepper

Preheat the oven to 200 ° C. Fry the chorizo crispy brown in a frying pan without oil or butter. Add the onion, peppers and oregano and let it gently simmer for 7 minutes with the lid on the pan. Stir frequently.

Meanwhile, mix in a bowl the mix for pizza bottom, cheese and oil and prepare the dough according to the directions on the package. Roll out the dough with a rolling pin into a thin piece and cut 8 circles out of the dough with a plate (Ø 14 cm).

Scoop the parsley and pepper through the chorizo mixture and spread the mixture over the dough. Fold the dough double, moisten the edges and form a nice scallop between thumb and forefinger. Place the empanadas on a griddle covered with parchment paper and bake in the center of the oven for about 20 minutes until golden brown and done. Serve the empanadas warm, lukewarm or cold.
