Peel 2/3 of the oranges and press the other out. Cut the peeled oranges into thin slices with a sharp knife.

Remove the green from the fennel bulb and keep separate. Cut off the bottom cm of the fennel and cut the tuber into wafer-thin slices.

Mix the orange juice with the mustard and oil. Add the raisins.

Mix the fennel and orange slices and scoop on a flat dish. Pour the dressing over and sprinkle with the fennel green.
