Focaccia with fennel salad and beef strips

Preheat grill pan. Halve focaccia along. Brush cutting edges thinly with oil and grid halves in 6-8 minutes brown and done, turn halfway. Cut fennel into quarters and cut pieces (in food processor) into thin slices.

Spoon in bowl fennel, vinegar and 1 tbsp oil together. Grate cheese coarse above it. Season with salt and pepper. Heat in wok rest of oil and fry beef strips with sambal on high heat, shoving brown and cooked. Season with salt.

Fill focaccia with lamb's lettuce, fennel salad and beef strips. Cut focaccia diagonally into four sandwiches.
